Yes, the era is one of the most popular amongst those groups you mentioned (although my own mystification at the attraction for reenacting the American Civil War over "1812" here in Canada is another story).
All the posts below have raised some of the reasons why, with Ken raising some particularly interesting points. First, you do have the man himself, worthy of the title "Titan." The whole era, including the Revolution, has a "sweeping dynamism" to it. These were major events, accompanied with an incredible enthusiasm. Yes, the uniforms were part of it too, and the battles were huge compared to what had gone before. This was the first time you saw Nations at war, rather than Kings and professional armies. Add that to the style of art, and the warfare is that much more interesting.
In addition, it wasn't really all that long ago, but is sufficiently removed to prevent it from being too close (as WWI would be). WWI is barely within living memory, and well, there's no way you could call that one "pretty". Those events also had an impact on the world, which echos to this day. The spread of Democracy, the rise of nationalism, beaucracy, the Industrial Revolution, and many other developments, originated in those years.
